Its thin, precise and very flexible blade allows you to score, lift fillets and remove skin and fat from fish. This blade also cuts cooked meats and fish, as well as foie gras and terrines, into thin slices. Its ultra-resistant handle is immune to heat, water and shock. Its 18 cm blade ensures a superior quality sharpness.
Features :
- Blade length: 18 cm
- The handle is overmolded in polyoxymethylene loaded with fiberglass which guarantees excellent resistance to wear, shock and water. The curved shape ensures a secure and comfortable grip.
- The full-tang blade extends throughout the handle and contributes to the robustness and balance of the knife, with the weight of the steel being distributed.
- Sandvik's modified 12C27 stainless steel developed for Opinel is renowned for its sharpness and ease of maintenance. Stainless steel capable of undergoing the heat treatment which gives it its good hardness is called martensitic. It has a carbon content of at least 0.40% which makes it possible to obtain a very satisfactory cutting edge without being susceptible to corrosion. Blade hardness 57-58 HRC.
